Here is a quick and easy recipe for a vegan egg salad. Not only is this recipe simple to make but it is very tasty as well. It tastes great on its own but can be made into a sandwich or eaten with a green salad. Click the link to find out the recipe.
Ingredients
1 Block of extra firm sprouted tofu
2 tablespoons of relish
½ cup of vegan mayo
1 ½ teaspoons of sea salt
4 tablespoons of mustard
2 tablespoons of pimentos
1 teaspoon black pepper
1 tablespoon of celery seed
Rinse and drain the tofu well. You want to remove as much moisture from the tofu to avoid a soggy salad. You can do this by using a tofu press or wrapping the tofu with paper towels and covering with heavy books until all the liquid drains.
Cut the tofu into cubes add the all of the ingredients to the tofu and mix well. Then serve and enjoy.
