Okay, so this isn’t macaroni. I prefer to only use whole wheat pasta but I was unable to locate some in the store. Which means I ended up making Fusilli pasta and cheese instead. But no worries. This is a quick meal that is comforting and easy to make. It is great for when the weather is dreary outside and you just want to stay home to indulge in this dish while wearing comfortable clothes. It is Memorial Day weekend but instead of the typical hot weather it is cool and dreary outside. In my book, weather like this calls for comfort food. Click here to find out the recipe.
Ingredients
1 package of whole wheat pasta
2 cups of almond milk
¼ cup of nutritional yeast
1 teaspoon of sea salt
1 package of Daiya cheddar Cheese
Boil your pasta then drain it and set it aside. In a separate pot, heat up the almond milk, Daiya cheese, nutritional yeast and salt. When the the daiya begins to melt stir in the pasta and continue cooking on a low heat until the Daiya is completely melted. Then serve and enjoy!
Just a little tip for you if you are making this dish for kids, you can cut up veggie hot dogs and mix it up with this mac and cheese.
