Top Ramen Spaghetti Squash

I know it has been a while since I last blogged. Work has been chaotic to say the least. Anyway let me move on to today’s recipe. I made spaghetti squash ramen noodle style. I don’t know if many of you are familiar with ramen noodles. The highly processed noodles that come with a high sodium packet of msg flavoring. They aren’t particularly good but they are quick and affordable which makes them the go to meal of choice for college students and people on a budget. Well I figured out a way to have healthier version of these noodles. I am begging your pardon in advance regarding pictures. Homemade Pizza-A Labor of Love

Once again the weekend is here and I had a craving for pizza. Only, I wanted to have something more gourmet in flavor and less processed. Well as the saying goes, “When you want something done right, do it yourself”. So I made my pizza from scratch starting from the dough to the sauce. The only way this would have been better is if I grew the toppings myself…LOL Anyway, this pizza was a labor of love so if you are going to attempt to make it be prepared to devote an hour or two to the process. Strawberry Coconut Cashew Cream Oatmeal

I remember when I was growing up how my mother used to force me to eat my oatmeal before going to school. I never liked oatmeal as a child and truth be told I don’t like it too much now that I am an adult. However, I realize that it is one of those good for you foods. So in keeping with my mother’s ways, I am still forcing myself to eat oatmeal in the morning. Only it is much easier to eat now because I add things to my oatmeal that make it much more palatable.
