Sometimes walking into the kitchen in a state of hunger can be a good thing. It allows you to make almost genius creations out of leftovers. This dish almost looks like it took a lot of effort but it is rather simple to make. Click here for the recipe.
Ingredients
3 Cups of cooked brown rice
2 Red bell peppers chopped
1 Large tomato diced
1 Large onion
2 Cloves of garlic minced
2 Large carrots diced
3 Tablespoons of olive oil
1 Small jar of marinated button mushrooms
1 Teaspoon of salt
½ Cup of vegetable broth
1 Head of Romaine lettuce
Coat a large pan well with the 3 tablespoons of olive oil on medium heat. In it, saute the chopped bell peppers, onions, tomatoes, garlic, and carrots until they are almost cooked through. Add the rice and vegetable broth and lower the heat on the stove. Then let the mixture continue cooking until the amount of vegetable broth reduces or is absorbed by the rice. Set aside to cool a a bit while you rinse and arrange your romaine leaves on a plate.
Spoon the rice mixture into the romaine leaves and top with the marinated mushrooms. Then serve and enjoy!

What a great use of leftovers! I am usually very terrible at making creative uses of leftovers. I am very much a follow a recipe or have a distinct plan kind of gal. I would never do well on Iron Chef 😛

Thanks! I think when you eat enough leftovers you eventually look for new ways to recreate them. I don’t think I would fare to well on Iron Chef either. They always throw in that one ingredient that you have no clue what to do with it…LOL
