This post is a long time coming. I got side tracked by some really good literature. D, I am blaming you for this one, because you got me hooked on that book. This is totally your fault.
Anyways… sometimes I like to spend my weekends kicking back and streaming movies on Netflix. The release of Orange is the New Black was creating so much buzz that I had to check it out. Since it was a series release with the entire season available for my viewing pleasure, I knew that popcorn wouldn’t be enough to sustain me. So I planned my snack food/meal accordingly.
What better food to shove into your mouth while mindlessly watching television other than nachos. It has everything you require from a snack/meal. Great flavor, crunch, salt, protein, and mild sweetness from the avocado. Along with the tang from the Pico de Gallo. I couldn’t have planned a better snack. These fully loaded nachos were everything and the added plus was that Orange is the New Black turned out to be so good. I can’t wait for season two. I highly recommend these nachos for marathon tv watching whether it is Scandal, Breaking Bad, Shameless, or Orange is the New Black. Whatever the show is these nachos will get you through it. Pico De Gallo
4 ripe plum tomatoes, seeded and finely chopped
1 small white onion, finely chopped
1/2 cup cilantro leaf (chopped)
2 jalapeno peppers (seeded and finely chopped)
1 lime (juice the entire lime)
Combine all ingredients; cover and refrigerate for at least an hour.
Guacamole with Cilantro
2 large ripe avocados
1 small onion (minced)
1 lime, juice of
1 medium tomato, finely chopped
1/4 cup chopped cilantro leaf (or more, to taste)
1 jalapenos seeded and minced
½ Teaspoon of sea salt
Put all the ingredients in a food processor and blend until chunky or creamy, depending on your preference.
1 tablespoon cumin
2 cans (15 ounce size) black beans, rinsed and drained
1 can (15 ounce size) whole kernel corn, drained
1 red bell pepper, minced
1 small purple onion, minced
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/3 cup lime juice
1/4 cup olive oil
3 cloves garlic, crushed
1/2 teaspoon salt
1 teaspoon dried crushed red pepper
1/2 teaspoon freshly ground black pepper
Combine all the ingredients in a large bowl then refrigerate for an hour or so.
1 package of Daiya pepper jack cheese
1 bag of baked tortilla chips
1 can of organic re-fried beans
Now comes the hard work. On a plate or platter, start setting up your nachos by first setting down a layer of tortilla chips. Then add the re-fried beans, followed by the southwest salsa, guacamole, Daiya cheese and Pico de Gallo. Continue until you have enough layers then garnish with more south west salsa, and Daiya cheese. Lastly, put it in the oven or microwave until the Daiya is melted.
You can garnish this further by adding vegan sour cream, fresh avocado slices, fresh cilantro and green onions. Enjoy!
