The Vegan Kat’s Panzanella Salad

I had all of this leftover bread from making the french toast in the last post. Luckily, I came across Vegan Kat’s recipe for Panzanella (bread salad). Coconut French Toast

Okay…If you have figured it out by now, I have a thing for coconuts. I love coconuts and I can’t get enough of them. My love affair with coconuts started when my grandmother made me coconut juice and other treats from the coconut tree in her yard.

“Chicken” Stir Fry

I have been infatuated with all things noodle based lately. I think it has to do with the changing seasons. Now that we are leaving summer and entering fall, I am all about comfort foods. I guess this is my way of trying to soothe myself because I don’t like cold weather. The way I cope with winter is by eating plenty of savory comfort foods.
