“Chicken” Stir Fry



I have been infatuated with all things noodle based lately. I think it has to do with the changing seasons. Now that we are leaving summer and entering fall, I am all about comfort foods. I guess this is my way of trying to soothe myself because I don’t like cold weather. The way I cope with winter is by eating plenty of savory comfort foods. So be prepared for more hearty dishes in future posts. In the meantime, click here for today’s recipe.


1 Package Gardein Chicken Strips

1 Small onion (diced)

6 Scallions (sliced)

1 Tomato (diced)

3 Garlic cloves (minced)

1 16oz Package of broccoli

1 Package of fresh mini Portabello mushrooms (sliced)

½ Cup of Teriyaki sauce

1 Teaspoon of sriracha sauce

1 Box of rice noodles

3 Tablespoons of peanut oil

1 ½ Cups of water

1 Knuckle/1 inch piece of ginger (minced)

6 leaves of fresh basil (chopped)


Heat up a pan with Peanut oil on medium heat and saute onions, mushrooms, broccoli, garlic, tomatoes, ginger basil, and scallions until almost soft. Add rices noodles and the 1 ½ cups of water to the pot. Keep stirring until the noodles are soft. Add more water if needed. Add the entire package of Gardein chicken strips and Teriyaki sauce of your choosing. Note- Teriyaki sauce comes with Gardein chicken strips but you may need more sauce. Stir everything well to allow all the ingredients to mix well with the noodles. Garnish with scallions and serve. Enjoy!

  1. I love gardein chicken strips and this looks like a great and easy way to use them.

  2. These fake chicken strips just loook like real chicken strips! This dish looks very tasty too!
