Coconut French Toast

Okay…If you have figured it out by now, I have a thing for coconuts. I love coconuts and I can’t get enough of them. My love affair with coconuts started when my grandmother made me coconut juice and other treats from the coconut tree in her yard.

My mother used to make amazing french toast. I was missing my mother’s french toast. Feeling inspired by my mother and grandmother, I made my mother’s french toast recipe and put my own spin on it. So click here to see how I used coconuts in this breakfast dish.Ingredients

Flax Egg Replacer- 3 tablespoons flax meal and 12 tablespoons of water

6 thick slices whole wheat bread

1 can of coconut milk

1 pinch of Turmeric

1 teaspoon of cardamom

1 teaspoon of cinnamon

½ teaspoon of nutmeg

½ teaspoon of cloves

2 cups of water

3 tablespoons of coconut oil

Maple syrup

Instructions

Prepare flax seed by adding 3 tablespoons of flax meal and 12 tablespoons of water in a small bowl and setting it aside until later.

Cut 6 thick slices of bread to soak in mixture.

Blend coconut milk with cardamom, cinnamon, nutmeg, cloves, 2 cups of water, and Turmeric (to give the yellow color that egg yolks normally gives french toast).

After blending the coconut milk with the spices, pour into a large bowl and soak each slice of bread in it until it is well coated on both sides.

Prepare the frying pan by heating the 3 tablespoons of cocoImagenut oil on medium heat until it bubbling and ready for frying.

Fry each slice of toast until it is brown on both sides. Pour on Maple syrup, or Agave nectar if you prefer. You can also top each slice with earth balance, coconut flakes, and the fruit of your choice before serving. Enjoy!

  2. Mmm, I love french toast. The addition of cardamom, cinnamon and nutmeg seem especially fitting for a comfort food like this. Makes it perfect for this cooler fall weather.
