Here is a dish that tastes like you put in a lot of effort even though we all know the truth…LOL I think any working person can relate to coming home and feeling frazzled when thinking about preparing dinner. This a great meal to make using items you probably already have on hand. It is a great recipe for busy moms looking to prepare a meatless meal the kids will enjoy. Click here to see the recipe.


1 box of Penne pasta or pasta of your choice

1 package of Daiya Mozzarella

2 tablespoons of nutritional yeast

1 jar of spaghetti sauce (your choice of meatless/dairy free sauce)

1 16oz can of corn

1 16oz can of organic black beans

1 teaspoon of garlic powder

1 teaspoon of sea salt


Cook pasta until it is al dente/ almost fully cooked. Then add the nutritional yeast, spaghetti sauce, black beans, corn, Daiya, garlic powder, and sea salt. Stir to make sure everything is mixed well. Allow to simmer for 10 minutes on low heat. Then serve and enjoy!
