I know it has been a long time since my last post. While work was busy the silence was mainly because I wasn’t feeling inspired and that translated to my cooking. I had a lot of blah sort of meals but fear not, I found my inspiration just in time for Virtual Vegan Potluck. I actually found this recipe in my photo archives. This is another one of my quick and easy dishes. Click here for the recipe.Ingredients
1 16oz Box of Penne pasta
1 Large tomato (sliced)
1 Medium onion (sliced)
1 Bunch of fresh spinach
3 Cloves of garlic (minced)
1 Teaspoon of Cayenne pepper
1 Package of mini Portabello mushrooms (chopped)
1 Jar of Puttanesca sauce
2 Tablespoons of Olive Oil
2 sprigs of basil (chiffonade)
Cooking Instructions
To make the sauce, add the Olive Oil,onion, garlic, tomato, basil and saute on medium heat. Add the mushrooms, spinach, Puttanesca sauce, and cayenne pepper to the pan and allow to simmer on low heat.
For the pasta, cook until the pasta is al dente. Drain the pasta and add it to the sauce. Allow the pasta to cook until it is done. Make sure to stir it well to make sure all of the ingredients are mixed well. Then serve and enjoy!
