Peruvian “Chicken” Stuffed Avocado

I used to frequent this Peruvian restaurant in the Bronx with super nice owners and delicious food. It was just the sort of place to pop into on a Saturday evening to watch a soccer match, enjoy the company of friends and eat delicious Peruvian cuisine. There are so many dishes that I miss from that restaurant but one that comes to mind the most is the stuffed avocados. I decided to recreate the dish with my own spin by using more colorful items (like heirloom tomatoes, cucumbers, and bell peppers) to feed the eye as well as the stomach. Vegan Kyinkyinga/Suya -Ghanaian Kebab

Kyinkyinga (pronounced chin-chin-ga) is a popular street food in Ghana. It is also referred to by the name Suya. Kyinkyinga is basically a shish kebab but it is made with different spices. It is usually prepared on the grill and sold by street vendors or local chop bars. However, it was a special occasion type of food in my house. My mother mostly made Suya on holidays and for family parties.

It is typically made using lamb, liver, beef, or goat meat chunks. On Thanksgiving, I decided to recreate a vegan version of this holiday dish. I am pleased to tell you that I was successful in this mission. Click here to feast on this spicy delight. Continue reading

Mushroom and “Cheese” Baba Ghanoush

I was all prepared to put up a different recipe when this one muscled it’s way into today’s post. Sometime last year a friend and I went for a decadent late lunch at a Lebanese restaurant. We feasted on Hummus, Baba Ghanoush , fresh pita bread and so much more. Well today my stomach was feeling a bit nostalgic for that meal. So I decided to whip up some Baba Ghanoush for lunch today. Only I changed it a bit by adding mushrooms and Daiya. Also, rather than eating it cold, I chose to have it warm instead. It was fantastic! I urge you to try it. Click here for the recipe.
