I have been infatuated with all things noodle based lately. I think it has to do with the changing seasons. Now that we are leaving summer and entering fall, I am all about comfort foods. I guess this is my way of trying to soothe myself because I don’t like cold weather. The way I cope with winter is by eating plenty of savory comfort foods. This post is a long time coming. I got side tracked by some really good literature. D, I am blaming you for this one, because you got me hooked on that book. This is totally your fault.
Anyways… sometimes I like to spend my weekends kicking back and streaming movies on Netflix. The release of Orange is the New Black was creating so much buzz that I had to check it out. Since it was a series release with the entire season available for my viewing pleasure, I knew that popcorn wouldn’t be enough to sustain me. So I planned my snack food/meal accordingly.
What better food to shove into your mouth while mindlessly watching television other than nachos. It has everything you require from a snack/meal. Great flavor, crunch, salt, protein, and mild sweetness from the avocado. Along with the tang from the Pico de Gallo. I couldn’t have planned a better snack. These fully loaded nachos were everything and the added plus was that Orange is the New Black turned out to be so good. I can’t wait for season two. I highly recommend these nachos for marathon tv watching whether it is Scandal, Breaking Bad, Shameless, or Orange is the New Black. Whatever the show is these nachos will get you through it. I was all prepared to put up a different recipe when this one muscled it’s way into today’s post. Sometime last year a friend and I went for a decadent late lunch at a Lebanese restaurant. We feasted on Hummus, Baba Ghanoush , fresh pita bread and so much more. Well today my stomach was feeling a bit nostalgic for that meal. So I decided to whip up some Baba Ghanoush for lunch today. Yes, you read it correctly. No, I am not referring to the song Red Red Wine by UB40. Although a glass of red wine will be lovely with this meal. Red Red was given the name because of it’s red color from the tomato sauce and palm oil. This is a dish that never disappoints. It is rich, savory and comforting bite after delicious bite. It is so yummy that you will want to sop up the remaining bits with your fingers. However, I urge you to exercise some control…LOL
I so enjoyed eating this as a child and I enjoy it more now that I am able to make it myself. It is wonderful to know that I can have Red Red on demand whenever the craving beckons. I often meet fellow Ghanaians who are surprised when I tell them that I am vegan. They tell me that they can’t give up the meat, poultry, or seafood in our national dishes. I understand how they feel. When I was wavering in my decision to become vegan, part of my hesitancy was in thinking that I would have to give up all the foods I love so much. Well, I am here to tell you that we can still enjoy the wonderful cuisine of home without sacrificing taste and at the same time preventing animal cruelty.

I call this recipe a time saving salad because that is exactly what it is. I like to make certain items in large portion sizes to last throughout the work week. It makes it easier for me when I have one less thing to do when getting ready for work the next day. I like to take a huge container and prepare a salad that will last 5-7 days. Leaving me to free to only worry about my entree. It also helps for those days when I am feeling to lazy too prepare my lunch the night before. I know it has been a while since I last blogged. Work has been chaotic to say the least. Anyway let me move on to today’s recipe. I made spaghetti squash ramen noodle style. I don’t know if many of you are familiar with ramen noodles. The highly processed noodles that come with a high sodium packet of msg flavoring. They aren’t particularly good but they are quick and affordable which makes them the go to meal of choice for college students and people on a budget. Once again the weekend is here and I had a craving for pizza. Only, I wanted to have something more gourmet in flavor and less processed. Well as the saying goes, “When you want something done right, do it yourself”. So I made my pizza from scratch starting from the dough to the sauce. The only way this would have been better is if I grew the toppings myself…LOL Anyway, this pizza was a labor of love so if you are going to attempt to make it be prepared to devote an hour or two to the process.
