In looking for something for today’s post I drew inspiration from Chris at www.caribbeanpot.com. Although he sometimes features vegetarian recipes, his website is definitely a carnivore food blog. However, I find a lot of his dishes are easy to customize for a vegan diet. Last week his Caribbean tuna sandwich gave me instant hunger pangs. I vowed to make it for lunch one day soon. I used to frequent this Peruvian restaurant in the Bronx with super nice owners and delicious food. It was just the sort of place to pop into on a Saturday evening to watch a soccer match, enjoy the company of friends and eat delicious Peruvian cuisine. There are so many dishes that I miss from that restaurant but one that comes to mind the most is the stuffed avocados. I decided to recreate the dish with my own spin by using more colorful items (like heirloom tomatoes, cucumbers, and bell peppers) to feed the eye as well as the stomach. Green smoothies are an excellent way to make sure that you are getting your proper servings of fruits and vegetables. I start every morning with a green smoothie or green juice. Some people can’t function without a morning cup of coffee. I on the other hand prefer to get my day started with a green smoothie. I am always changing the way I make my smoothies but I will share a simple recipe with you for one I made the other day.
