Caribbean “Tuna” Sandwich

In looking for something for today’s post I drew inspiration from Chris at www.caribbeanpot.com. Although he sometimes features vegetarian recipes, his website is definitely a carnivore food blog. However, I find a lot of his dishes are easy to customize for a vegan diet. Last week his Caribbean tuna sandwich gave me instant hunger pangs. I vowed to make it for lunch one day soon. Hearty Healthy Pasta

I know it has been a long time since my last post. While work was busy the silence was mainly because I wasn’t feeling inspired and that translated to my cooking. I had a lot of blah sort of meals but fear not, I found my inspiration just in time for Virtual Vegan Potluck. I actually found this recipe in my photo archives. Curried Chickpeas and Kale

I still had an additional package of chickpeas left over from Virtual Vegan Potluck. I already made tuna and hummus out of chickpeas so what is left? Curried chickpeas and kale of course! This in my opinion is one of those build-able dishes. You can add potatoes and turn it into a filling for roti (ie: dosas) or you can add it to rice and wrap it in a collard leaf for a unique tasting burrito.
