Caribbean “Tuna” Sandwich

In looking for something for today’s post I drew inspiration from Chris at www.caribbeanpot.com. Although he sometimes features vegetarian recipes, his website is definitely a carnivore food blog. However, I find a lot of his dishes are easy to customize for a vegan diet. Last week his Caribbean tuna sandwich gave me instant hunger pangs. I vowed to make it for lunch one day soon. Cheezy Baked Potato Soup

We are well into the fall season. I find that this is the time I start to crave more savory but not necessarily filling foods. In this case I wanted all the flavors of a baked potato but not the density of it in my belly. I felt like this soup was a great compromise for me because I got to enjoy the baked potato but I didn’t feel the need to take a nap after eating. The flavor is creamy, cheezy, and soothing like a cozy blanket. Yes, you read that correctly. I can’t be the only person who thinks certain foods reminds them of cozy bed linens…LOL

A Great Way to Start Your Day

Green smoothies are an excellent way to make sure that you are getting your proper servings of fruits and vegetables. I start every morning with a green smoothie or green juice. Some people can’t function without a morning cup of coffee. I on the other hand prefer to get my day started with a green smoothie. I am always changing the way I make my smoothies but I will share a simple recipe with you for one I made the other day.
