So here is my recipe for Virtual Vegan Potluck. I so enjoyed participating in the last potluck that I signed up to do it again. Be sure to start at the beginning of the potluck by going to Virtual Vegan Potluck.This recipe is not for the faint of heart. It is cheezy, rich, and takes hours to make. I came up with this recipe years ago when trying to come up with an idea for a work potluck event.

I have since veganized it and much to my surprise, it tastes even better than the non-vegan version. Plus you won’t feel full and bloated the way you do with regular cheese lasagna. I think it goes without saying that this dish is to be eaten with moderation but the special people in your life will never cease to thank you for making this for them. Cheezy Baked Potato Soup

We are well into the fall season. I find that this is the time I start to crave more savory but not necessarily filling foods. In this case I wanted all the flavors of a baked potato but not the density of it in my belly. I felt like this soup was a great compromise for me because I got to enjoy the baked potato but I didn’t feel the need to take a nap after eating. The flavor is creamy, cheezy, and soothing like a cozy blanket. Yes, you read that correctly. I can’t be the only person who thinks certain foods reminds them of cozy bed linens…LOL

Overnight Oats, Bananas and Figs. Oh My!

Okay, I admit it. I am late to the overnight oats party. So many food blogs have been raving about overnight oats and I didn’t get what all the hype was about until I tried it. One night I was rushing around prepping for the next work day and I decided that I didn’t want to miss my bed time due to cooking oatmeal for the next morning’s breakfast. I decided spur of the moment to try the overnight oats and see what all the buzz was about. Well let me just tell you that I am now on trend when it comes to prepping my oatmeal. “Chicken” Stir Fry

I have been infatuated with all things noodle based lately. I think it has to do with the changing seasons. Now that we are leaving summer and entering fall, I am all about comfort foods. I guess this is my way of trying to soothe myself because I don’t like cold weather. The way I cope with winter is by eating plenty of savory comfort foods. Red Red and Fried Plantain

Yes, you read it correctly. No, I am not referring to the song Red Red Wine by UB40. Although a glass of red wine will be lovely with this meal. Red Red was given the name because of it’s red color from the tomato sauce and palm oil. This is a dish that never disappoints. It is rich, savory and comforting bite after delicious bite. It is so yummy that you will want to sop up the remaining bits with your fingers. However, I urge you to exercise some control…LOL

I so enjoyed eating this as a child and I enjoy it more now that I am able to make it myself. It is wonderful to know that I can have Red Red on demand whenever the craving beckons.
