Grown & Sexy Vegan Cheese Steak Sandwich

Strange as it may seem, sometimes I think of food as a person. I know that it is kind of weird but stick with me and I will get to my point. The particular food I was wondering about was the Philly Cheese Steak. There are so many versions of the cheese steak out there. Don’t even get me started on who supposedly makes the best cheese steak. I have seen versions made with Steak-umm, ground beef, and worst yet cheese whiz.
So I started wondering what if the cheese steak was more mature, more cultured, and health conscious. I believe I came up with a vegan cheese steak that personifies all of these characteristics. Peruvian “Chicken” Stuffed Avocado

I used to frequent this Peruvian restaurant in the Bronx with super nice owners and delicious food. It was just the sort of place to pop into on a Saturday evening to watch a soccer match, enjoy the company of friends and eat delicious Peruvian cuisine. There are so many dishes that I miss from that restaurant but one that comes to mind the most is the stuffed avocados. I decided to recreate the dish with my own spin by using more colorful items (like heirloom tomatoes, cucumbers, and bell peppers) to feed the eye as well as the stomach. Hearty Healthy Pasta

I know it has been a long time since my last post. While work was busy the silence was mainly because I wasn’t feeling inspired and that translated to my cooking. Cheezy Baked Potato Soup

We are well into the fall season. I find that this is the time I start to crave more savory but not necessarily filling foods. In this case I wanted all the flavors of a baked potato but not the density of it in my belly. I felt like this soup was a great compromise for me because I got to enjoy the baked potato but I didn’t feel the need to take a nap after eating. The flavor is creamy, cheezy, and soothing like a cozy blanket. Yes, you read that correctly. I can’t be the only person who thinks certain foods reminds them of cozy bed linens…LOL

Homemade Pizza-A Labor of Love

Once again the weekend is here and I had a craving for pizza. Only, I wanted to have something more gourmet in flavor and less processed. Well as the saying goes, “When you want something done right, do it yourself”. So I made my pizza from scratch starting from the dough to the sauce. The only way this would have been better is if I grew the toppings myself…LOL Anyway, this pizza was a labor of love so if you are going to attempt to make it be prepared to devote an hour or two to the process.
