Vegan Kyinkyinga/Suya -Ghanaian Kebab

Kyinkyinga (pronounced chin-chin-ga) is a popular street food in Ghana. It is also referred to by the name Suya. Kyinkyinga is basically a shish kebab but it is made with different spices. It is usually prepared on the grill and sold by street vendors or local chop bars. However, it was a special occasion type of food in my house. My mother mostly made Suya on holidays and for family parties.

It is typically made using lamb, liver, beef, or goat meat chunks. On Thanksgiving, I decided to recreate a vegan version of this holiday dish. I am pleased to tell you that I was successful in this mission. Click here to feast on this spicy delight. Continue reading

So here is my recipe for Virtual Vegan Potluck. I so enjoyed participating in the last potluck that I signed up to do it again. Be sure to start at the beginning of the potluck by going to Virtual Vegan Potluck.This recipe is not for the faint of heart. It is cheezy, rich, and takes hours to make. I came up with this recipe years ago when trying to come up with an idea for a work potluck event.

I have since veganized it and much to my surprise, it tastes even better than the non-vegan version. Plus you won’t feel full and bloated the way you do with regular cheese lasagna. I think it goes without saying that this dish is to be eaten with moderation but the special people in your life will never cease to thank you for making this for them. Homemade Pizza-A Labor of Love

Once again the weekend is here and I had a craving for pizza. Only, I wanted to have something more gourmet in flavor and less processed. Well as the saying goes, “When you want something done right, do it yourself”. So I made my pizza from scratch starting from the dough to the sauce. The only way this would have been better is if I grew the toppings myself…LOL Anyway, this pizza was a labor of love so if you are going to attempt to make it be prepared to devote an hour or two to the process.
