Grown & Sexy Vegan Cheese Steak Sandwich

Strange as it may seem, sometimes I think of food as a person. I know that it is kind of weird but stick with me and I will get to my point. The particular food I was wondering about was the Philly Cheese Steak. There are so many versions of the cheese steak out there. Don’t even get me started on who supposedly makes the best cheese steak. I have seen versions made with Steak-umm, ground beef, and worst yet cheese whiz.
So I started wondering what if the cheese steak was more mature, more cultured, and health conscious. I believe I came up with a vegan cheese steak that personifies all of these characteristics. Peruvian “Chicken” Stuffed Avocado

I used to frequent this Peruvian restaurant in the Bronx with super nice owners and delicious food. It was just the sort of place to pop into on a Saturday evening to watch a soccer match, enjoy the company of friends and eat delicious Peruvian cuisine. There are so many dishes that I miss from that restaurant but one that comes to mind the most is the stuffed avocados. I decided to recreate the dish with my own spin by using more colorful items (like heirloom tomatoes, cucumbers, and bell peppers) to feed the eye as well as the stomach. Ghana Okra Stew (Vegan) and Fanti Kenke

I often meet fellow Ghanaians who are surprised when I tell them that I am vegan. They tell me that they can’t give up the meat, poultry, or seafood in our national dishes. I understand how they feel. When I was wavering in my decision to become vegan, part of my hesitancy was in thinking that I would have to give up all the foods I love so much. Well, I am here to tell you that we can still enjoy the wonderful cuisine of home without sacrificing taste and at the same time preventing animal cruelty.
