I have been gone nearly forever but fear not, I am still vegan. I really don’t have any excuse other than the fact that life got in the way. Too many details for me to go into at this time. However, I did pick up a new hobby (okay slight obsession). I found my love of gardening. I spent much of last summer growing veggies on my balcony. I enjoyed it so much that soon my balcony was not spacious enough. I ended getting a community garden space as well. Continue reading
I know it has been a long time since my last post. While work was busy the silence was mainly because I wasn’t feeling inspired and that translated to my cooking. I had a lot of blah sort of meals but fear not, I found my inspiration just in time for Virtual Vegan Potluck. I actually found this recipe in my photo archives. This is another one of my quick and easy dishes. Click here for the recipe. Continue reading

I know it has been a while since I last blogged. Work has been chaotic to say the least. Anyway let me move on to today’s recipe. I made spaghetti squash ramen noodle style. I don’t know if many of you are familiar with ramen noodles. The highly processed noodles that come with a high sodium packet of msg flavoring. They aren’t particularly good but they are quick and affordable which makes them the go to meal of choice for college students and people on a budget. Well I figured out a way to have healthier version of these noodles. I am begging your pardon in advance regarding pictures. I managed to snag a couple of photos with my phone before scarfing down everything on my lunch break. For the recipe click here. Continue reading
Once again the weekend is here and I had a craving for pizza. Only, I wanted to have something more gourmet in flavor and less processed. Well as the saying goes, “When you want something done right, do it yourself”. So I made my pizza from scratch starting from the dough to the sauce. The only way this would have been better is if I grew the toppings myself…LOL Anyway, this pizza was a labor of love so if you are going to attempt to make it be prepared to devote an hour or two to the process. If you want to save time by using a ready made dough and a jar sauce feel free to do so. I am all for whatever works. To find out this delicious recipe, click here.
