Whew! It has been forever and a day since I last posted here. I took on more duties at work and have returned home each evening too drained to even contemplate posting on the blog. Also, since the season changed I haven’t really had much of an appetite. I have either eaten things I already blogged about or I had vegan pizzas and Chinese take-out.

In the meantime let me share this review with you. I have really enjoyed these Numi Garden Sampler Savory Teas. You wouldn’t think tea flavors like broccoli cilantro, tomato mint, and carrot curry would be tasty as a tea but you are wrong. They are delicious. Click here to read the review. Continue reading

Grown & Sexy Vegan Cheese Steak Sandwich

Image

Strange as it may seem, sometimes I think of food as a person. I know that it is kind of weird but stick with me and I will get to my point. The particular food I was wondering about was the Philly Cheese Steak. There are so many versions of the cheese steak out there. Don’t even get me started on who supposedly makes the best cheese steak. I have seen versions made with Steak-umm, ground beef, and worst yet cheese whiz.
So I started wondering what if the cheese steak was more mature, more cultured, and health conscious. I believe I came up with a vegan cheese steak that personifies all of these characteristics. I present to you the Grown & Sexy Cheesesteak. It is grown because it healthy with a taste that appeals to grown folks and it is sexy because it is still delicious. Click here to view the recipe. Jackfruit -Pulled “Pork” Sandwich

Image

While I have enjoyed being off work due to the multiple snow days this winter the truth is that I am ready for summer. I am ready for sunny days, warm nights, lighter clothing and of course barbecue. I am unable to work any magic as far as the weather is concerned but I settled for fooling my stomach by making this delicious and savory barbecue jackfruit sandwich. It is smoky and sweet from the barbecue sauce but zesty and spicy from the guacamole. Click here for the recipe. Continue reading

Caribbean “Tuna” Sandwich

Image

In looking for something for today’s post I drew inspiration from Chris at www.caribbeanpot.com. Although he sometimes features vegetarian recipes, his website is definitely a carnivore food blog. However, I find a lot of his dishes are easy to customize for a vegan diet. Last week his Caribbean tuna sandwich gave me instant hunger pangs. I vowed to make it for lunch one day soon. It was definitely worth the wait. Continue reading

Thiakry from Senegal (Vegan)

Thiakry

One of the things I love about New York is that it makes me feel like an explorer. I’ll never forget the day I went for a long leisurely walk and happened upon a nondescript restaurant. The menu outside advertised Senegalese cuisine.

When I opened the door, I felt as if I had been transported to Dakar. The decor was beautiful and the music from the live band playing that night was on fire. That night, I had what I still refer to as the meal of my life. Everything was absolutely delicious. I enjoyed my meal along with the company of the other patrons.

At the end of the meal I was brought a curious dessert made with couscous called Thiakry.  This dessert tasted absolutely divine. It was sweet from the pineapples and a little sour from the yogurt. I asked the waiter for the recipe and I couldn’t believe how simple it was to make.

I made a vegan version of the Thiakry today. I decided to make the recipe my own by adding roasted peanuts, cinnamon, and coconut flakes. Click here for this delicious recipe. Continue reading

Orzo Salad

Image

Happy New Year! I initially planned to start this year’s post with the obligatory black eyed peas recipe but I forgot to purchase black eyed peas when I went grocery shopping. Perhaps I will get around to posting that recipe soon. Anyway, one thing I want to do most this year is be more efficient with my time. I am examining all the areas in my life where I can manage my time more effectively and leave myself open to do more of the things that hold my interest. One of the areas I want to implement this goal is by planning ahead for my week with meal plans, easy recipes, and etc… Also, I want to make the most of the food I have on hand. That is how this Orzo Salad came about. It is quick, easy, and delicious. Click here to find out the recipe. Continue reading

Virtual Vegan Potluck- Fried Eggplant Lasagna

Eggplant Lasagna 3

So here is my recipe for Virtual Vegan Potluck. I so enjoyed participating in the last potluck that I signed up to do it again. Be sure to start at the beginning of the potluck by going to Virtual Vegan Potluck. This recipe is not for the faint of heart. It is cheezy, rich, and takes hours to make. I came up with this recipe years ago when trying to come up with an idea for a work potluck event.

I have since veganized it and much to my surprise, it tastes even better than the non-vegan version. Plus you won’t feel full and bloated the way you do with regular cheese lasagna. I think it goes without saying that this dish is to be eaten with moderation but the special people in your life will never cease to thank you for making this for them. Click here to find out the recipe. Continue reading
